Stainless Steel: Though more weather resistant than other products, they need to be sharpened more often.
Hunting knives should be sharpened to a 25 degree angle and kitchen knives to a 17 degree angle (unless otherwise noted).
Do not store knives in the sheath and keep a light oil applied.
Damascus/ High-carbon Steel: Damascus is both beautiful and high in strength. You will have to sharpen these much less than their stainless steel counterparts.

These knives stay sharp and strong because of their high carbon steel content. This makes them especially susceptible to rust. Never store the knife in its sheath and always put a light coat of oil on the blade when you are done using it. If the blade becomes wet, hand dry it thoroughly.
If while sharpening you remove some of the damascus grain, simply coat the affected spot with white vinegar and let sit for 5 minutes until you find that you have a match to the rest of the knife grain.
Handles: Your handles should be fairly maintenance free. Any wood should be oiled regularly with any wood appropriate oil or wax. Any brass on the handle will get a natural patina over time. If you do not want the patina, use a solvent free brass cleaner to keep its natural bright shine.
